Method
- Season chicken lightly with fish sauce for 15 minutes.
- Line a heavy pot with banana leaf for the standard-kitchen method. Use actual bamboo only when it is clean, untreated, food-safe, and suitable for cooking.
- Layer onion, ginger, garlic, and lemongrass in the pot, then arrange chicken over them.
- Add coconut water, stock, and papaya or chayote. Cover tightly and bring to a gentle simmer.
- Cook 35–45 minutes until chicken is tender, skimming only if necessary.
- Add young coconut strips and simmer 5 minutes.
- Fold in leaves and adjust fish sauce. The broth should taste naturally sweet from coconut, not sugary.
- Rest covered 5 minutes and serve hot with rice.
