Food Delivery Platforms and Restaurant Economics
Food delivery combines customer discovery, payment, promotions and logistics. Philippine platform terms, 2025 accounts and 2026 developments reveal how restaurants can distinguish more orders from a stronger business.

A restaurant gains more than a courier when it joins a delivery platform. It gains a shop window, an ordering system, payment handling and access to a pool of riders. It also accepts another set of charges and operating rules. The business question is whether the additional orders leave enough money after food, packaging, labor, promotions and platform costs—and whether the kitchen can fulfil them without damaging its other trade.
The Philippine market is changing as this account closes on 12 October 2026. Alongside GrabFood and foodpanda, Shopee’s official help center now identifies Metro Manila as a ShopeeFood service area, listing its cities and Pateros. That is evidence of another operating offer in the capital region, not nationwide coverage or an established share of Philippine delivery spending. Availability still needs to be understood at the customer’s actual location. Source 16
The customer’s bill and the restaurant’s proceeds are different
| Item | What the public terms establish | What the merchant must reconcile |
|---|---|---|
| Grab merchant service fee | The rate comes from the e-commerce service agreement | Applicable rate, calculation base and settlement deductions Source 1 |
| foodpanda merchant commission | Packages vary; the selected rate appears during registration | The actual package and any subsequent agreed changes Source 2 |
| Customer delivery and other checkout charges | foodpanda displays applicable charges before checkout | Do not assume every customer charge becomes restaurant revenue Source 4 |
| Advertising | Grab Marketing Manager uses the applicable billing metric | Campaign spending and authorized wallet deductions Source 9 |
| Subscription-linked merchant offers | pandapro participation has separate enrollment terms | Offer obligations and any enrollment charge Source 10 |
Grab’s registration page explicitly places its merchant commission in the individual agreement. foodpanda’s Philippine registration page similarly says it offers several commission packages, with the exact rate shown during registration. A percentage found in another restaurant’s account, an overseas market or an old promotion cannot establish the terms for a new Philippine outlet. Even the same headline rate may have different economics if the calculation base or additional obligations differ. Source 1 Source 2
Pricing freedom also has contractual limits. Grab’s merchant code restricts markups, says the merchant service fee should not be passed directly to the customer, and requires pickup and Dine-Out menu prices to match in-store prices. Those published rules should be read with the outlet’s agreement. A restaurant cannot safely assume that adding a separate platform-fee line or raising every channel’s price is an unrestricted remedy for lower delivery margins. Source 3
On the customer side, foodpanda’s September 2026 terms explain that platform prices may differ from other sales channels and that delivery, minimum-order-value and service charges can change. The checkout total is therefore a better comparison than a menu thumbnail or a free-delivery headline. A customer discount and the restaurant’s cost of providing it are separate matters; the customer-facing terms do not disclose every merchant’s funding arrangement. Source 4
Contribution is the amount available to help pay costs that continue beyond a single order. It is not final profit. An additional order during a quiet hour may use otherwise idle capacity; an order at the peak may displace a more profitable purchase or require extra staff. The relevant comparison is therefore what the restaurant gains and gives up by accepting the order, including its effect on service to other customers.
Promotions purchase visibility, not a guaranteed return
Grab’s advertising terms distinguish impressions, engagements, clicks and other billing measures. They also allow deductions from store earnings when the merchant chooses that payment method. Advertising is consequently a separate cost to reconcile with settlement, even when it appears inside the same merchant app. A report showing sales associated with an advertisement does not, by itself, show how many purchases would have happened anyway or whether those sales covered the campaign cost. Source 9
foodpanda’s pandapro merchant terms illustrate another layer. Participating merchants undertake to honor the agreed offer, and the enrollment form specifies any sign-up fee. This is a program agreement, not the general commission schedule for every restaurant. Operators need to distinguish a platform-funded voucher, a merchant-funded discount and a jointly funded campaign. The funding split determines whose margin supports the customer’s saving. Source 10
A useful campaign review follows repeat behavior as well as launch-day sales. Did customers return after the offer ended? Did they buy a profitable combination of dishes? Did the kitchen experience more cancellations or complaints? Revenue attributed to a campaign is useful evidence, but a restaurant still needs its own comparison period and cost record. Otherwise, subsidized activity can be mistaken for a stronger underlying business.
The digital order still has to pass through a kitchen
| Stage | Published requirement or feature | Business implication |
|---|---|---|
| Availability | Grab requires accurate hours and item availability | An attractive listing is useless when the order cannot be made Source 3 |
| Capacity | foodpanda offers pause and busy-status controls | Managing demand requires an active operating decision Source 2 |
| Handover | Grab requires correct items and secured, sealed packaging | Packing errors can turn a sale into a deduction or complaint Source 3 |
| Arrival | foodpanda describes delivery times as estimates affected by conditions | The menu and promise must tolerate a variable journey Source 4 |
Packaging is part of the product delivered. A good dish can reach the customer in poor condition if liquids leak or items are mixed incorrectly. Grab’s code places correct packing and item completion on the merchant and describes deductions for wrong or missing items. That gives accuracy a direct financial consequence. For foods such as soup, fried chicken and desserts, testing the actual trip is more informative than judging the dish only at the kitchen counter. Source 3
A delivery business does not always require a dining room. foodpanda’s registration guidance accepts HomeChef and cloud-kitchen applicants with the necessary documentation, while retaining operating-location requirements. ShopeeFood likewise provides an application route for restaurants and home-based food businesses, with review, approval and activation required before orders begin. Platform admission is a commercial process; it does not establish the suitability of every home kitchen or remove other applicable business obligations. Source 2 Source 17
The operational discipline is concrete: keep the menu synchronized with stock, make preparation estimates realistic, separate order checking from packing, and match the parcel to its collection details. A restaurant serving several apps must also prevent each device from treating the same remaining stock as independently available. Better coordination can protect both delivery sales and the experience of customers already waiting at the restaurant.
Competition depends on usable alternatives
A June 2026 Philippine Review of Economics paper by Jopson and colleagues examines multihoming: using more than one platform. Its evidence comes from December 2023 interviews, not a 2026 market census. The analysis retains 386 users and 156 riders after exclusions. More frequent delivery demand was associated with users adopting multiple apps; riders’ choices also depended on local demand and the opportunities offered by competing platforms. The rider sample was purposive, and the authors caution against reading the associations as causal effects. Source 11
The Philippine Competition Commission discussed that research at its September 2026 symposium. A policy discussion is not a finding that a particular platform has broken competition law. Its relevance is the question it puts into view: can customers, restaurants and riders realistically use another service when price, access or conditions become unattractive? Source 12
For a restaurant, a second platform can broaden reach, but it can also duplicate menu maintenance, campaign administration and reconciliation. For a rider, a second account is only useful if it offers worthwhile jobs within practical reach. For a customer, another app matters when it has suitable restaurants and reliable fulfilment nearby. The existence of a rival brand does not automatically create an equally usable alternative in every neighborhood.
Regional merchants make the point tangible. At its 2026 Cebu summit, foodpanda recognized businesses including Alberto’s Pizza, Dimsum Break, Ribshack and Sans Rival Cakes and Pastries. The list shows regional food brands participating in the platform economy. It remains a platform-selected set of awards, not an independent ranking of the Visayas restaurant market or evidence of the awardees’ audited profitability. Source 13
Its Davao event highlighted Tuna Republik, Villa Tuna Restaurant, Family Fried Chicken and Bigby’s, among others. The company also described sponsored listings, promotional campaigns and customer insights as merchant tools. These examples show that the delivery story extends beyond national chains and Metro Manila. They do not establish that every merchant uses every tool or that all campaigns are fully paid for by the platform. Source 14
Read parent-company figures at the right scale
| Reporting business | Period | Published measure | What it does not measure |
|---|---|---|---|
| Grab Deliveries | 2025 full year | Revenue US$1.800 billion | Philippine restaurant sales alone Source 5 |
| Grab Deliveries | Second quarter 2026 | Revenue US$531 million; GMV US$4.249 billion | First-half revenue or restaurant take-home proceeds Source 6 |
| Delivery Hero Asia | 2025 full year | GMV €20.780 billion; total segment revenue €4.418 billion | foodpanda Philippines alone Source 7 |
| Delivery Hero Asia | First half 2026 | GMV €9.930 billion; revenue €2.089 billion | A directly comparable Philippine market share Source 8 |
Grab’s audited annual report shows why the distinction matters. Deliveries includes groceries, packages, advertising and Malaysian supermarket operations alongside restaurant delivery. The report also identifies US$316 million of 2025 Philippine revenue across its businesses, which cannot be relabeled as GrabFood revenue. Neither a regional segment total nor a country total across services supplies the missing intersection of Philippine restaurant delivery alone. Source 5
The second-quarter 2026 Grab release reports a 2.3% Deliveries adjusted EBITDA margin against GMV. That is a platform segment measure with specified exclusions, not a merchant commission. The group’s US$235 million quarterly profit also included a US$307 million gain associated with consolidating Superbank, alongside other gains and costs. Assigning that group profit to meal delivery would confuse banking-related accounting with restaurant transactions. Source 6
Delivery Hero’s completed 2025 results similarly describe a business spanning several regions and quick commerce. Its €903 million adjusted EBITDA is a defined management measure, not interchangeable with reported net income. In August 2026 the company said it and Uber would continue operating independently pending a proposed takeover’s completion and regulatory approvals. That future corporate transaction should not be described as a completed change in Philippine foodpanda operations. Source 7 Source 8
Rider economics are part of restaurant economics
The Institute for Labor Studies’ pandemic-era research identified flexibility and autonomy as attractions of delivery work, while calling attention to employment status and statutory protection. That is historical research, not a current earnings estimate or a ruling that every rider has the same legal status. Its enduring business point is that the delivery system depends on people whose working conditions cannot be understood from order counts alone. Source 15
An August 2026 government communication also reminded self-employed platform workers registered with the SSS about Employees’ Compensation support, subject to eligibility and claims requirements. It explained that the relevant extension to self-employed members dates to 2020. The reminder is not proof of universal enrollment or automatic payment after every incident. Protection on paper and effective access to it remain different questions. Source 18
Waiting time, failed handovers and unclear collection arrangements consume a rider’s working day and can damage the customer’s meal. Restaurants influence those outcomes through preparation and pickup practices. Platforms influence matching, incentives and dispute handling. Customers influence the last step through accurate addresses and availability. Treating delivery as a shared operation makes its practical dependencies clearer than assigning every success or failure to the app alone.
For a restaurant, sustainable delivery growth means more than appearing in search results. It means a repeatable margin after channel costs, a menu that travels well, a kitchen that can handle demand, and records that explain settlement deductions. For customers, it means a clear total price and a meal that arrives as expected. The strongest platform relationship is one that keeps those everyday results visible as the market expands.
