Cagayan Siggagga: Whole Malagkit, Coconut and a Separate Sweet Finish
Cook malagkit fully before its coconut finish, then set a shallow tray and offer syrup or coconut curds separately.
In this article
Siggagga keeps malagkit grains whole. Cook them fully, coat them in a coconut mixture and use a short oven finish to set the surface. A separate sweet topping lets the rice remain the centre of the dish. Source 1
The regional tradition
Siggagga, siggaggat and sinummun appear in PIA’s inventory as names for a Cagayan whole-grain baked or roasted rice-cake preparation associated with Ibanag, Itawit and Malaueg communities. Coconut milk and muscovado or issi supply richness and sweetness; coconut curds or cheese are listed toppings. The grain remains whole, unlike a rice-flour batter. This small home version uses a saucepan and oven. Source 1
Ingredients and equipment
For four to six pieces, use 180 g dry glutinous rice, 250 ml water or the amount specified on its packet, 150 ml unsweetened coconut milk, 40 g muscovado and a pinch of salt. Prepare a greased 15 cm shallow oven-safe dish. Optional coconut curds, syrup or a small amount of cheese can be offered separately.
Preparation, step by step
- Rinse the glutinous rice and drain. Follow its packet’s soaking directions if supplied; soaking changes the amount of cooking water required.
- Cook with the measured water, covered over low heat, until the grains are tender, usually about 15–20 minutes after reaching a simmer. Rest covered for 10 minutes and check for hard centres.
- Heat coconut milk, muscovado and salt gently in a wide pan. Fold in the cooked rice and stir for about 5–10 minutes until the liquid coats the grains without pooling.
- Spread in the greased dish in an even layer, about 2–3 cm deep. Do not mash all the grains into a paste.
- Bake at 180°C conventional or 160°C fan for about 15–20 minutes, until the surface sets and lightly colours. The rice is already cooked; this stage concentrates and sets the cake.
- Rest for 10 minutes before portioning. Offer optional topping in a separate bowl so each person controls the sweetness.
Texture and troubleshooting
The finished pieces should hold visible, tender grains. If the mixture is loose before baking, reduce it a little longer in the pan. If the edges dry out, shorten the oven finish and check that the rice was not pressed into an overly thin layer.
Buying and serving value
Rice, coconut milk and the topping actually served determine the portion cost. Cheese is optional and changes the flavour as well as the allergen profile. For a gathering, two shallow trays are easier to finish and cool than one deep mound.
- Grain hard under browned top: Cook rice fully before the second stage. Baking alone will not hydrate the centre.
- Oil separates on surface: Use gentler heat and measured gata. Rich coconut can break with prolonged heat.
- Slices fall apart: Rest briefly and adjust pan depth. Starch needs time to set.
Finish cooking the grain before it reaches the oven. A browned surface cannot compensate for hard rice underneath.
