A Sunday Lugaw Bar for Ten: Cook the Rice and Serve Toppings at the Right Time

A crowd-service plan for rice porridge and individually chosen Filipino toppings with a safe hot-food workflow.

In this article

A lugaw bar offers an easy social meal because guests can season each bowl themselves. The difficulty is not adding ginger or garlic; it is preparing enough warm porridge, avoiding a gluey pot at the bottom and keeping cooked chicken, eggs and condiments safely handled as people serve themselves. Plan it as a small service line, not a pot that is left standing unmonitored all Sunday.

Ten bowls means a measured finished volume

Ten bowls at 300 ml require 3 litres of finished porridge, before any extra servings. Choose the rice and liquid amounts from your usual lugaw recipe, then measure the finished pot; a 250 ml bowl and a 350 ml bowl create quite different yields. Keep hot drinking-quality broth ready for gradual adjustment as the porridge thickens. For toppings, ten half-eggs require five fully cooked eggs; portion cooked chicken separately so the base remains a choice for people who do not want it. Source 1

Prepare porridge and toppings separately

  1. Estimate guest count and serving size. Check that the pot holds enough liquid with spare headroom for stirring; do not fill it to the rim.
  2. Cook rice in broth with ginger using a trusted recipe, stirring as needed to prevent scorching and checking that the grains are completely soft.
  3. Cook chicken to 74°C and eggs until white and yolk are firm. Keep cooked toppings either at 60°C or above, or at 4°C or below until a small serving batch is needed.
  4. Before guests arrive, prepare a stable hot-food station and a table for labelled toppings. Use covered, separate containers and clean spoons.
  5. Hold porridge at 60°C or above, checking after stirring. Add hot broth in measured increments if it becomes too thick, and refill toppings from safe reserves with separate spoons.
  6. At the end of service, cool any rice porridge being saved quickly in shallow portions, ideally within an hour, and refrigerate. Use within 24 hours and reheat only once until steaming throughout.

Divide the serving jobs

Put toasted garlic, spring onion and calamansi on the side so each bowl can be finished at the table. One person should serve or monitor the pot while another replenishes the toppings. After the meal, record the bowl size and actual count; that is the quantity to repeat for the next gathering.
