Chicken Hamonado Without Burnt Sugar: Brown the Chicken, Then Simmer the Pineapple

A practical chicken hamonado sequence that prevents raw centres, scorched sweet glaze and soggy pineapple pieces.

In this article

Chicken hamonado needs enough time for the chicken centre to cook before the pineapple sauce becomes a sticky glaze. Brown in batches, braise gently, then adjust sweetness at the end. The chicken hamonado recipe shows the same pineapple-and-soy foundation; the smaller home batch below keeps the sauce easy to monitor. Source 1

Before you begin

Use 800 g bone-in chicken cut into about 8 similar pieces, 200 ml unsweetened pineapple juice, 150 g drained pineapple pieces, 3 tablespoons soy sauce, 1 chopped onion, 4 minced garlic cloves, 2 tablespoons oil and up to 2 tablespoons brown sugar. Keep water ready for topping up. These are home-adaptation quantities; sweetened juice or pineapple packed in syrup needs less added sugar. Have a thermometer ready for the largest chicken pieces.

The method, in order

  1. Mix the pineapple juice and soy sauce with the chicken in a covered food-safe container. Marinate in the refrigerator for 30 minutes to overnight; do not leave the bowl on the counter.
  2. Drain the chicken, retaining the marinade for cooking. Pat the surface dry enough to brown without excessive spattering.
  3. Heat the oil and brown chicken in batches, about 2–3 minutes per side as a starting point. Browning is not the doneness test. Transfer pieces to a plate reserved for the still-uncooked chicken.
  4. Soften the onion in the pan, then add garlic. Return all chicken and its plate juices, pour in the reserved marinade and bring it to a boil.
  5. Reduce to a gentle covered simmer. Begin checking after 25–30 minutes and continue until every large piece reaches 74°C in the thickest meat, clear of bone. Add a little water if the sauce is reducing before the chicken is ready.
  6. Add pineapple pieces and 1 tablespoon sugar. Simmer uncovered until the fruit is hot and the sauce lightly coats a spoon. Taste before adding the remaining sugar; if the chicken is done but the sauce needs more reduction, lift the chicken out temporarily.
  7. Return the chicken to the finished sauce, coat gently and serve. Do not use uncooked reserved marinade as a table sauce.

Troubleshooting and choices

A sauce that darkens and sticks before the meat is ready needs lower heat and a little water. A thin sauce can reduce separately after the chicken is cooked. Chicken doneness should be checked in more than one large piece because bone position and thickness vary; sweetness and a glossy surface cannot confirm it. Source 2

Portions and cost

If the finished, reduced sauce measures 300 ml, four servings receive 75 ml each when divided evenly. Measure after reduction, not before it. Dividing eight chicken pieces into four servings gives two pieces per person, but their edible weights may still differ.
