Custard Cake: Keep the Flan and Sponge Layers Distinct in the Oven
Organise caramel, custard and egg foam in the right order, then use a water bath and careful cooling for a clean inverted cake.

Choose the pan with the formula
Janette’s recipe specifies a 9-by-2-inch or 8-by-3-inch round pan and a 350°F water-bath bake of about 50–60 minutes. Follow all three component formulas. Custard and cake use separate yolk allocations: count and label the bowls before mixing. Source 1
Check the fit while everything is empty. The cake pan needs to sit securely in the larger tray, and you need room to lift it out without tipping hot water towards yourself. Choose a serving plate wider than the pan, with enough depth to catch caramel. Set a dry cooling area nearby. These small decisions are easier now than when a baked cake and a tray of hot water occupy the oven.
Three mixtures, three different handling needs
| Component | Handling priority | Why it matters |
|---|---|---|
| Caramel | Prepare it first and let it cool in the pan | The custard needs a settled base. |
| Custard | Combine gently and strain into the pan | A smooth liquid layer is the starting point. |
| Cake and egg foam | Fold until evenly combined, then pour carefully | The airy cake mixture must retain enough volume. |
Panlasang Pinoy’s method likewise adds the combined cake and meringue over the custard, then bakes with hot water in a roasting tray. Its sequence helps explain the key boundary: after the layers enter the pan, they are not stirred together. Treat the filled pan as one finished assembly. If you notice a stray streak of unmixed cake batter, solve that in the mixing bowl on the next attempt rather than stirring through the custard now. Source 2
Protect the foam before pouring
King Arthur’s meringue guidance emphasises keeping yolk and greasy residue out of the whites. Separate each egg into a small bowl before adding its white to the main bowl, so one broken yolk does not contaminate the whole batch. A clean metal or glass bowl is easier to trust than a plastic bowl that may retain an oily film. Add the sugar gradually and stop at the firm, glossy stage required by the cake recipe. Source 3
Fold with a broad motion that reaches the bottom of the bowl, turning it as you work. The aim is an even batter without hidden heavy streaks, while avoiding unnecessary mixing. If the meringue looks dry and broken before folding, do not expect extra stirring to restore its original volume. King Arthur notes that prolonged whipping can eventually collapse the foam; watching the texture is more useful than blindly extending the mixing time. Source 3
Bake, cool and turn out with support
Follow Janette’s water level and baking window, check the cake with a toothpick, then cool before loosening the edge. Move the pan out of its bath carefully. Hold the serving plate and pan securely together, invert, and allow the caramel to release before lifting. Source 1
