Fiesta Rice Dishes: Arroz Valenciana, Bringhe and Bagoong Fried Rice

In this article

Rice is never just “rice” in the Philippines. For parties, holidays and big family gatherings, plain steamed rice often steps aside for full dishes built around it – colourful, loaded with toppings and rich enough to be the centre of the table.

Two dishes worth adding to your repertoire are arroz valenciana / bringhe and bagoong fried rice. Both use familiar ingredients but transform rice into something special.

Arroz Valenciana / Bringhe – Filipino party paella

Arroz valenciana and its Kapampangan cousin bringhe are often called Filipino paella: rice cooked in a richly seasoned broth with meats, seafood and vegetables, then decorated with slices of egg, bell pepper and other toppings.

Our Arroz Valenciana / Bringhe recipe walks you through this fiesta dish step by step – from sautéing the aromatics to layering in chorizo, chicken and other add‑ons. The result is a one‑pan centrepiece that looks as good as it tastes.

It’s perfect for Noche Buena, birthdays or any occasion when you want something that feels celebratory without being too fussy.

Bagoong Fried Rice – full flavour in one pan

If arroz valenciana is for big planned events, bagoong fried rice is what you bring out when you have cold rice in the fridge, some vegetables and a jar of fermented shrimp paste.

In our Bagoong Fried Rice recipe, the bagoong seasons the whole pan – salty, funky and slightly sweet once it hits the heat – while the rice, vegetables and any add‑ons (like pork, tofu or egg) turn it into a full meal.

It’s a great way to give leftover rice and vegetables a completely new personality, and pairs well with simple grilled dishes or even on its own with sliced cucumber and tomato on the side.

When to cook which rice dish

Think of these two as serving different roles in your Filipino cooking:

  • Arroz Valenciana / Bringhe – for when you need a centrepiece, want guests to say “wow” when the dish comes out, and don’t mind a bit more prep and garnishing.
  • Bagoong Fried Rice – for weeknights, potlucks or quick lunches when you want maximum flavour in minimum time using what you already have.

Both recipes are already on PagkainPinoy. Cook bringhe for your next special occasion, then keep bagoong fried rice in your back pocket for the nights in between when you still want something that tastes like it belongs on a Filipino table.
