Food for the Gods: Keep Date-and-Walnut Bars Chewy and Easy to Slice

Prepare the fruit deliberately, keep the baking method consistent and plan the cut before wrapping a Filipino holiday tray.

Choose a complete recipe, including the fruit treatment

Panlasang Pinoy uses creamed butter, dates and walnuts; Bake from Scratch uses melted butter, soaked dates, walnuts and pecans. Choose one complete formula and follow its fruit preparation, pan and baking instructions. Combining their wet and dry ingredients changes the recipe. Source 1 Source 2

For a clearly specified pan, the Bake from Scratch recipe uses a parchment-lined 13-by-9-inch tin. Its dates are soaked, drained, patted dry, pitted and chopped before entering the batter. The publisher confirms that water can replace bourbon for that soaking step. Use that option if you want a version without added spirits; follow the complete recipe rather than pouring the soaking liquid into the batter. Source 2

Prepare the expensive ingredients before mixing

Check each date for a remaining pit as you chop it, including dates sold as pitted. Keep the pieces reasonably even so a single large lump does not dominate a small bar. Check walnuts as you break them up too; remove any shell fragments before the nuts disappear into batter. Set aside the prepared fruit and nuts together so you can see what will actually go into the pan.

This is also the moment to check your available quantity against the recipe. If you are short of walnuts, choose a recipe that already accommodates the nuts you have or buy the missing amount. Quietly reducing the fruit or nuts while keeping the planned number of gift pieces produces a different bar. It is better to make one deliberate batch than to discover midway through mixing that the most distinctive ingredients are missing.

Watch the whole baking schedule

Panlasang Pinoy starts its bars at 350°F, then lowers the oven to 300°F. Set a reminder for that change, follow the recipe’s doneness check and cool the slab before cutting. Source 1

Bake from Scratch also uses a hotter opening stage followed by a lower setting. For its specific formula, it gives both a clean wooden-pick check and a centre temperature of 96°C. That is a baking endpoint for this bar, not a universal target for all cakes. Let the bars cool in the pan, then lift them with the parchment before cutting. Source 2

Plan a useful cut

A four-by-six grid gives 24 portions. If the slab measures slightly less than the pan after baking, divide its actual width and length rather than forcing the pan’s nominal measurements onto it. Mark the edges lightly before making full cuts. A shallow mark is easier to correct than a cut that reaches halfway through the tray.

Annalise Sandberg’s bar-cutting guidance recommends a fully cooled slab, a board underneath and a large knife. Briefly warming the blade and wiping it dry between cuts helps prevent dragged edges. Use a ruler if equal portions matter. The point is to cut through the bar with support rather than lift and bend it as you work. Source 3

Before each bar goes into its wrapper

  • The slab is still warm: Leave it supported until completely cool.
  • The cut edge carries loose crumbs: Clear the knife before the next cut.
  • A bar is much larger than its neighbours: Correct the layout before wrapping the whole batch.
  • The wrapper compresses the bar: Use a larger wrapper or change the intended portion.

Keep the ingredient list with a gift batch so the recipient can identify the nuts, wheat, eggs and dairy actually used. If you make the water-soaked version, describe it accurately rather than calling every Food for the Gods bar a rum cake.
