Method
- Measure the guava purée with 100 ml water; adjust with a little water if needed to make 500 ml in total. Combine coconut milk with the remaining 100 ml water in a separate saucepan.
- Add half the sugar to each mixture, adjusting for the sweetness of the guava. Add the manufacturer’s specified agar dose to each 500 ml layer. Use pure agar, not gelatin or a sweetened premix assumed equivalent by weight.
- Bring the guava mixture to the full boil required by the agar packet, stirring constantly, and boil for the stated activation time. Pour into a shallow 1.2 litre mould or dish.
- Cook the coconut layer separately according to the same packet instructions and add vanilla. Let it cool slightly while remaining liquid. When the guava layer is just set on top but still warm, gently pour coconut over the back of a spoon onto it.
- Cool promptly, refrigerate and chill for at least 3 hours. Cut into portions and add peanuts only at serving.
