Method

  1. If starting with raw pork intestines, boil them in water for at least 5 minutes before cleaning. Drain safely, then clean and rinse carefully with minimal splashing. Wash hands and clean and disinfect the sink, surfaces and utensils before preparing other food.
  2. Pre boil the intestines in water with a little salt and vinegar for 30–40 minutes until tender, then drain and cool.
  3. Slice the boiled intestines into manageable lengths.
  4. In a bowl, combine vinegar, soy sauce, garlic, ketchup, brown sugar, salt, and pepper to make a marinade.
  5. Add the intestines and marinate in the refrigerator 1–2 hours.
  6. Thread the marinated intestines onto soaked bamboo skewers.
  7. Grill over medium heat, turning and basting with leftover marinade, until charred in spots and cooked through, then serve with vinegar dip.
