Method

  1. Use a clean fist-shaped kumò pouch with a tight two-strand weave.
  2. Rinse and drain the rice thoroughly.
  3. Spoon rice into the rounded centre, filling no more than halfway.
  4. Settle the grains with a gentle shake rather than pressing them into the compact shape.
  5. Submerge in boiling water and cook 40–50 minutes.
  6. Turn the packets halfway through so the thick rounded centre heats evenly.
  7. Open one and check that the centre is tender with no hard core.
  8. Drain and serve as plain rice, keeping ceremonial or offering uses outside the cooking preparation.
