Method

  1. Use a reputable packaged grated sweet-cassava product specifically labelled for this type of cooked dish and complete all label-directed preparation before mixing. Do not substitute fresh or bitter cassava; if the package does not give suitable directions, choose another product.
  2. Mash the ripe saba until mostly smooth and combine with cassava and grated coconut.
  3. Warm coconut milk, sugar, salt, and butter in a heavy pan until dissolved.
  4. Add the cassava-banana mixture and cook over medium-low heat, stirring and folding constantly.
  5. Continue 25–35 minutes until the cassava turns translucent, the raw aroma disappears, and the mixture pulls from the pan.
  6. Press into a banana-leaf-lined tray or spoon into small leaf packets.
  7. Steam the tray or packets for 15 minutes to finish the centre and deepen the leaf aroma.
  8. Cool until set, top with latik if desired, and cut into pieces.
