Method

  1. If using bamboo, choose fresh untreated food-safe bamboo and rinse it well; for a home adaptation, line a heavy pot with banana leaves.
  2. Season the meat or fish lightly with salt, ginger, onion, lemongrass, and turmeric if using.
  3. Spread the rinsed rice in the lined pot, add the protein and firm vegetables, then pour in the water or broth and coconut milk; if omitting the coconut milk, replace it with 1 cup additional water or broth.
  4. Cover very tightly so steam cannot escape. Bring to a gentle simmer, then lower the heat.
  5. Cook 25–35 minutes without frequent opening, until the rice is nearly tender and the protein is cooked.
  6. Add delicate greens or mushrooms near the end, reseal, and cook 5–10 minutes more.
  7. Rest covered 10 minutes so the rice finishes absorbing the aromatic juices.
  8. Fluff gently and serve from the banana leaf. The rice should be tender and the protein moist, with a light bamboo or leaf aroma.
