Method
- Drain the soaked glutinous rice very well. Combine it with coconut milk, muscovado, salt, and pandan in a wide pan.
- Cook over medium-low heat for 8–12 minutes, stirring often, until the grains absorb most of the coconut milk but remain only half-cooked. Remove the pandan and cool for 10 minutes.
- Cut the morado bananas into even strips about the length of the planned suman. Use fruit that is ripe and aromatic but still firm enough to hold its shape.
- Place 1/3 cup of the rice mixture on a softened banana leaf and spread it into an even rectangle. Lay one banana strip along the centre.
- Bring the rice around the banana, roll the leaf into a snug log, fold the ends inward, and tie securely without crushing the filling.
- Arrange the packets in a steamer and cook over steady medium heat for 35–45 minutes, replenishing the steamer with boiling water if necessary.
- Open one tester: the rice should be completely tender and sticky, while the banana remains distinct and softly set inside.
- Rest the packets for 10 minutes, then serve warm with latik or grated coconut. Refrigerate leftovers promptly.
