Method
- Salt the shredded papaya lightly and leave it for 10 minutes. Rinse, squeeze very well, and separate the strands.
- Grill or pan-sear the fish until fully cooked. Cool, flake it into large pieces, and remove every bone.
- Heat oil in a wide pan and sauté garlic and onion until soft and aromatic.
- Add the shredded papaya and toss for 2 minutes. Pour the vinegar around the pan and let it boil undisturbed for 2 minutes.
- Add water or fish stock, fish sauce, pepper, and chili. Cover and cook over medium-low heat for 8–10 minutes.
- Uncover and continue cooking until the papaya is tender but still resembles separate noodle strands and most excess liquid has evaporated.
- Fold in the flaked fish gently and heat for 2 minutes without breaking it into paste.
- Taste for salt and acidity, then serve with spring onion and fried garlic, traditionally beside a rich stew such as dinuguan.
