Method
- Combine the shrimp, grated coconut, coconut milk, onion, garlic, ginger, tomatoes, chilies, fish sauce, and pepper. Cook one teaspoon in a small pan and adjust the seasoning.
- Cut the softened banana leaves into double-layered squares and wipe both sides clean.
- Place about 1/2 cup filling in the centre of each leaf. Fold the long sides over the filling, tuck in the ends, and tie securely.
- Arrange the parcels seam-side down in a steamer, leaving a little space between them for steam to circulate.
- Steam over steady medium heat for 25–30 minutes. Top up the steamer with boiling water if necessary so the temperature does not drop.
- Open one parcel carefully: the shrimp should be opaque, the coconut tender, and the juices bubbling. Steam longer if the centre is still cool.
- Rest 5 minutes, then serve with rice and calamansi. Open the packets away from your face because the trapped steam is hot.
