Blended silken tofu sweetened with arnibal and served with sago, like drinkable taho. — Serves 2 glasses · Prep 20m
Ingredients
- 1 block silken tofu (300–350 g), chilled or gently warmed
- 1/2 cup small sago pearls, cooked and cooled
- 1/2 cup brown sugar
- 1/2 cup water
- 1–2 drops vanilla extract, optional
Method
- Make the arnibal syrup: In a small saucepan, combine the brown sugar and water and simmer until slightly thick and syrupy. Add vanilla if using and let cool slightly.
- In a blender, combine the silken tofu with about 1/4–1/3 cup of the warm arnibal and blend until completely smooth and creamy.
- Decide if you want the drink warm or cold; warm gently in a saucepan for a hot version, or chill the blended tofu mixture for a cold version.
- Divide the cooked sago between two glasses.
- Pour the tofu mixture over the sago and drizzle extra arnibal on top to taste.
Kitchen note
Handle the silken tofu gently; blending on low speed is enough to make it smooth without turning it foamy or watery.
