Method

  1. Divide the drained rice into two equal portions. If using red glutinous rice, combine it with the portion intended for the sweet half.
  2. In one pan, cook the first rice portion with 1 cup coconut milk, 1/2 cup water, salt, and ginger over low heat until the liquid is mostly absorbed and the grains are half cooked.
  3. In a second pan, cook the other portion with the remaining coconut milk, remaining water, and brown sugar until half cooked and lightly reddish-brown.
  4. Cool both mixtures until safe to handle and remove the ginger from the white rice.
  5. Place a strip of white rice and a strip of sweet brown rice side by side on a banana leaf.
  6. Roll tightly so the colours remain distinct, then fold and tie the ends.
  7. Steam the parcels for 30–35 minutes, until both rice mixtures are completely tender.
  8. Rest 10 minutes before unwrapping. Slice crosswise to show the contrasting halves and serve warm.
