Tahure and Tausi in Totsong Bangus: Balance the Sauce Before Adding the Fish

Learn what the two fermented seasonings contribute, why recipe quantities vary, and how to correct the sauce without breaking the fried milkfish.

Finish the sauce’s salt, sourness and consistency while the bangus is out of the pan. Tahure and tausi both bring strong seasoning, but they are different ingredients: tahure is fermented bean curd that can be mashed into the sauce; tausi is fermented black beans. Totsong bangus needs that distinction. Fresh tokwa can add another texture, but it does not replace tahure’s flavour. Source 2

Start with one complete formula

PagkainPinoy’s companion recipe pairs 700 g bangus with 25 g mashed tahure, 1 tablespoon drained and briefly rinsed tausi, 200 g tomatoes, 30 ml cane vinegar and 200 ml water. Use its full aromatics and frying instructions. Keep these measures together for the first batch. Source 1

A tahure cube is a package-dependent measure. If you change brands, note the weight actually used rather than copying an old cube count. Likewise, record whether the tausi was drained, rinsed or added with brine. These small notes make the next pot reproducible without pretending that every jar contains identical seasoning.

Separate the sauce work from the fish work

  1. Prepare and fry the bangus using the companion recipe, then lift it out gently.
  2. Cook onion, garlic, ginger and tomatoes until softened. Loosen the mashed tahure with measured water.
  3. Add tausi, vinegar and remaining water. Simmer, then taste a cooled spoonful before further seasoning.
  4. Adjust the sauce before returning the fish in one layer; spoon sauce over the pieces.

Simpol mashes tahure into the aromatic base and finishes with kinchay; its optional chilli is another separate choice. Those additions can change the aroma and heat without requiring a bigger dose of fermented seasoning. If using its oyster sauce, count that as another seasoned ingredient before reaching for salt. Diagnose the flavour you actually taste

Too salty, too sour and too thick are different problems. For excessive saltiness, remove some sauce and replace it with unsalted water or an unsalted tomato base; adding sugar changes sweetness but does not remove salt. If the seasoning is balanced and only the consistency is thick, add water gradually. Avoid diluting a pan and immediately boiling it back to its previous volume, which returns the salt concentration toward where it began.

If the sauce is pleasantly savoury but sharply sour, a small addition of the recipe’s optional sugar can change the balance. Stop when the desired flavour is reached. The aim is a sauce you enjoy with plain rice, not one in which sweetness obscures every other ingredient. A cooled tasting spoon is more useful than guessing over a steaming pan. Source 3

Keep the final simmer gentle

Kawaling Pinoy treats this as twice-cooked fish. Liquid softens the fried surface; prolonged simmering will not preserve a crisp crust. Build the sauce first, handle the pieces minimally and stop once the fish is cooked. Source 2

For an additional texture, Panlasang Pinoy adds fried firm tofu during the finishing stage, keeping it distinct from the mashed tahure. Source 4
