Tanjay Bodbod with Mango and Sikwate: A Negros Oriental Merienda Service
How to buy or make a modest rice-parcel adaptation and serve it with mango and chocolate without collapsing the texture or misrepresenting Tanjay makers.
In this article
Tanjay bodbod is a Negros Oriental rice-roll specialty that is often enjoyed with sikwate or ripe mango. A 2022 PNA report describes its local trade and those accompaniments. For a home merienda, the useful task is service: keep the rice tender, the mango cool and the drinking chocolate warm, then bring them together just before eating. Source 1
Plan six small settings
Buy six fully cooked bodbod parcels from a traceable producer, asking when they were made and how they should be stored. If making a home rice parcel instead, the budbud pilit recipe is a related glutinous-rice option; it should not be labelled as a named Tanjay maker’s formula.
Prepare two ripe mangoes, enough to give each person a small serving of flesh, and 50–70 g tablea for 600 ml water. Tablea sweetness varies, so keep sugar separate until tasting. Have six cups, clean plates, a saucepan and enough refrigerator space for the cut fruit and any rice parcels that will wait.
Arrange the service in order
- Transport purchased rice parcels promptly under the producer’s cold-handling instructions. If the preparation or holding history is uncertain, do not try to make them safe by warming them.
- Wash the mangoes before peeling and cut the flesh into six portions. Cover and refrigerate while preparing the other components.
- Heat the measured water, add chopped tablea and whisk over gentle heat until dispersed. Taste a cooled spoonful before adding sugar; dilute a very strong chocolate with a measured little hot water.
- For safely chilled rice parcels, reheat once until steaming hot through the centre. Open one sample to check the rice itself, not just the leaf. Follow the producer’s method and serve immediately.
- Set the mango beside the rice and pour the chocolate into cups at the last moment. Offer extra sugar separately, rather than heavily sweetening all three components.
- Put out only the six planned settings. Keep remaining fruit and unused parcels chilled instead of leaving a large decorative platter on the table.
Keep the textures distinct
A sweet rice parcel may need little additional sweetness in the drink. The tablea frothing guide helps with a gritty or oily-looking cup: disperse the chocolate properly before changing the dilution. Serve the drink alongside the bodbod so diners can choose how to pair them; soaking every parcel in advance makes its surface wet.
Parcel size varies, so count the pieces you actually bought and check whether one makes a snack or a larger serving. For an unfamiliar producer, buy a small tasting quantity before ordering for a gathering. The service plan does not require a claim that all Tanjay makers use the same sweetness, wrapper or portion size.
Do not reset the rice clock
For a fresh home batch, cool rice quickly, ideally within one hour, refrigerate and use within 24 hours; reheat only once. Buying or reheating a parcel does not restart its preparation history. Keep cut fruit and coconut-rich foods at 4°C or below, and keep time out of refrigeration within two hours, or one hour above 32°C. Source 2 Source 3
