Twenty Unexpected Ulam Orders: Check Burners and Cold Space Before Saying Yes

When an online post creates sudden food orders, a small Filipino kitchen should test its actual capacity, delivery windows and safe storage before accepting customer payments.

In this article

A video of pork adobo and rice attracts twenty orders in an hour. The home cook has two burners, a small refrigerator and packaging for only twelve meals. Taking every payment immediately may feel like success, but it can force rushed cooking, late deliveries, unnecessary raw-meat exposure and angry customers. The professional answer is a capacity gate: count what the kitchen can cook, store, pack and dispatch safely before promising a collection time.

Measure the bottleneck instead of guessing

List burners, pots, rice-cooker capacity, preparation space, refrigeration, helpers and packaging. Measure the normal recipe before scaling a Filipino recipe to the new count. If one serial production stage releases four complete meals every twenty minutes after setup, twenty meals need five cycles: 100 minutes for that stage alone. Add preparation, the first cooking time and dispatch where they are not already included. Overlapping tasks can change elapsed time, so draw the real sequence instead of adding or dividing every timer blindly.

Accept orders in numbered confirmed windows

Open a numbered collection slot only for meals the whole process can supply. Twelve clean boxes allow twelve immediately packable orders, even if the pan could make twenty; resolve the missing eight boxes before accepting the rest. Confirm the dish, price, collection time and payment status. Review actual ingredient labels before agreeing to an allergy-related request. Keep the order sheet away from raw-food handling. A pickup change needs a new holding decision, not an automatic extension because a customer has paid. Source 1

Separate extra ingredients from extra finished food

Check room for the additional raw ingredients and any food that must be chilled before buying it. Keep perishables at 4°C or below and finished hot food at least 60°C when holding for collection. Verify the actual food temperature; a full refrigerator or a bag of ice without a tested arrangement does not establish extra capacity. Reserve ingredients only for batches that can be cooked fully, and never leave partially cooked meat on a switched-off burner for later finishing. Source 2

Tell the customer when the answer is no

Give the customer a confirmed alternative such as a later collection slot only after checking staff, equipment and storage. Online food delivery quality starts with a promise the kitchen can meet. Keep clear terms for prepayments and agreed cancellations, and reconcile accepted, completed, late, cancelled and refunded orders at closing. A full first slot followed by a smaller reliable second slot is a measurable operation; an unlimited list of paid comments is an unresolved obligation. Source 3

Accept only the orders that pass every capacity check

  1. Measure complete meals per real batch, including rice and packaging.
  2. Count safe refrigeration, burners, helpers and dispatch capacity.
  3. Publish only confirmed quantity and time slots with ingredient information.
  4. Accept new orders only when the cooking and holding plan remains safe.
  5. Record fulfilled, late, cancelled, refunded and unaccepted demand separately.

Illustrative capacity decision

  • Serial stage — Observed or assumed position: 4 complete meals per 20-minute cycle; Decision: 5 cycles = 100 minutes for that stage.
  • Clean packaging — Observed or assumed position: 12 boxes ready; Decision: Only 12 orders can be packed until more arrive.
  • Cold and hot holding — Observed or assumed position: Must be measured for the intended load; Decision: No extra batch without safe capacity.
  • Collection slots — Observed or assumed position: Times derived from the complete sequence; Decision: Confirm each slot before payment.

The timings are hypothetical. They exclude any setup, first cooking or dispatch not contained in the measured stage.

Keep a record of demand you could not accept

Record declined orders separately from cancellations and late orders. That shows whether more packaging, a different menu, extra help or a later production day would solve the actual constraint. Increase capacity through a measured change, then update the available slots when the complete process has been checked.
