Planning Three Family Ulam Dinners With a ₱1,000 Target
Plan three ulam dinners for four people, set a peso limit and calculate ingredient costs from the quantities used and your own receipts.
In this article
A peso target is useful only when the basket, number of eaters and meals are defined. This plan is for three evening ulam meals for four people, not a promise to feed a family for three entire days. Rice, breakfast, drinking water and any pantry supplies already on hand need their own accounting. The task is to assemble three satisfying, different dinners from a single trip while allowing a cheaper protein or vegetable to replace an expensive one.
Define the ulam-only envelope
For three ulam dinners for four people, a sample ₱1,000 envelope allocates ₱390 to eggs, tofu or canned fish, ₱250 to vegetables, ₱130 to dried munggo, ₱110 to aromatics and seasoning, and ₱120 to transport or substitutions. These allowances total ₱1,000; they are not quoted shop prices. Write actual pack prices beside the shopping quantities below before buying. If a category comes in under its allowance, move that money to another category rather than buying extra simply to spend it.
The rotation uses munggo with greens, sardines with kalabasa, and tofu-and-cabbage gisa with eggs. For a starting four-person shopping plan, consider 250 g dry munggo, about 200 g usable leafy greens, two 155 g cans of sardines, 600 g peeled kalabasa, 500 g firm tokwa, 500 g cabbage and four eggs, plus onions, garlic, tomatoes, oil and seasonings. Adjust portions to the actual diners and pack sizes. Rice and breakfast are outside this ulam-only target unless you deliberately add them to the envelope.
Shop and cook the three dinners
- Write down four eaters, three dinners and what is already paid for. Measure rice separately if it is not part of the ₱1,000 envelope; do not silently count it as free for a household that must buy it.
- At the market, price a small set of proteins and vegetables by their actual packs and usable portions. Use current shop labels and a dated Philippine Department of Agriculture bulletin only as a regional cross-check, not as the bill.
- Buy the flexible ingredients first: one leaf vegetable, one firm vegetable, munggo or an alternative bean, one main protein and the aromatics used by more than one dish. Record every peso and any fare.
- Cook the munggo until properly tender; add greens near the end. For the second dinner, simmer the chosen protein with vegetables and keep flavour in the sauce instead of relying on a large extra spoonful of salt.
- For dinner three, brown the drained tofu in batches and add cabbage late. Cook the four eggs separately until both whites and yolks are firm, serving one with each portion if suitable for the diner. Make that evening's rice fresh, and chill eligible leftovers promptly in shallow containers.
- Add the receipt, transport and missing pantry purchases. If the total is over ₱1,000, change the ingredient mix or budget while retaining enough food for the four diners. Record unused dry stock separately from wasted or uneaten food.
Compare usable food, not pack weight
A can of sardines and the same purchase weight of whole fish do not provide the same edible portion. Compare drained or usable amounts, not just sticker prices. Adjusting the three-dinner basket
- Protein price rises. What to do: Keep munggo and vegetables; price a smaller portion of eggs, tokwa or canned fish. Reason: Recalculate cost by four actual servings, not the nominal package weight.
- Leafy greens are unavailable. What to do: Use a vegetable that stores better such as cabbage or kalabasa. Reason: Keep the same food role without claiming it is a nutritionally identical swap.
- Rice must also be purchased. What to do: Add it to a separate rice budget, or redefine the ₱1,000 as a whole-dinner target and reprice the basket. Reason: State clearly whether the envelope covers ulam only or the entire dinner.
- Shopping runs over budget. What to do: Record the overrun; shorten the plan or revise the ceiling. Reason: Keep the list, portions and spending target consistent before buying.
Freeze any protein bought for later use when it cannot be used within its refrigerated storage period. Keep perishables at 4°C or below, cook each evening's rice fresh where practical and chill eligible leftovers promptly in shallow containers.
