Three Filipino Ulam Dinners in a Holiday Rental: Shop for the Kitchen You Have

An overseas or domestic travel plan for three familiar Filipino dinners using one saucepan, one pan and a carefully measured short-stay grocery basket.

In this article

A holiday rental can have a beautiful kitchen photograph but only one saucepan, a blunt knife and a fridge that has not yet been checked. An OFW visiting family or a domestic traveller wanting familiar ulam should plan around what is actually there, not an imagined fully stocked kitchen. This is a three-evening dinner framework for two to four travellers; it does not replace breakfast, restaurant meals or a complete travel food budget. Check the rental's permission to cook and the equipment before buying fresh ingredients.

Price a short-stay basket

For two travellers, a starting three-dinner basket is two small 155 g sardine cans, 300–400 g firm tofu, four eggs, about 1 kg mixed cabbage and tomatoes, two onions, garlic and around 450 g dry rice for six modest portions. Add suitable oil, soy sauce, vinegar and any fruit; adjust quantities to appetite. For four people, price a larger basket and check pot capacity before roughly doubling the starting amounts. Refrigerated ingredients belong on the list only after checking the fridge and local product-storage instructions.

With one burner, cook only that evening's rice, keep it covered briefly while you finish the ulam and serve promptly. For a longer wait, use verified hot holding at 60°C or above rather than leaving the pot warm on the side. Check that the refrigerator holds 4°C or below with a thermometer; an illuminated dial proves only that the appliance has power. Source 1 Source 2

Cook for the equipment available

  1. Inspect the actual burner, pan, pot, lid, knife, chopping board, dish soap, running potable water and refrigerator before writing the three-day shopping list.
  2. Choose three dishes sharing onion and vegetables but with different proteins and textures. Note two to four actual eaters and what each will eat.
  3. Buy supermarket pack sizes small enough to finish during the stay. Keep raw products separate from fruit and bread, and bring chilled food home promptly.
  4. For the first evening, cook rice if needed and make the canned-fish tomato-cabbage sauté. Open the tin only when ready to use; do not save it in a warm cupboard.
  5. For the second and third evenings, prepare tofu with garlic and vinegar, then an egg-and-vegetable torta, using clean utensils and proper cooking. Make fresh rice each night unless safe chilled storage is confirmed.
  6. Reconcile the receipts with meals actually served. Leave no opened perishables in an unattended rental fridge and follow local waste and cleaning instructions at checkout.

Buy what you can finish

Compare the amount you will use before checkout, not just price per gram. A smaller rice bag or sauce bottle may cost less overall if a large remainder cannot travel. Buying one evening at a time can also suit a weak mini-fridge. When refrigeration is reliable, keep cooked rice for no more than 24 hours under FSA guidance, after rapid cooling, and reheat it only once. Source 2

Adjust the basket to the rental

  • One burner and one pot. What to do: Cook components sequentially and serve promptly. Reason: A rental kitchen is not a restaurant line with unlimited equipment.
  • No reliable refrigerator. What to do: Shop for same-day perishables or rely on unopened shelf-stable food. Reason: Do not plan three days of fresh fish or cooked rice without cold storage.
  • Very large supermarket pack. What to do: Buy a smaller size even if its gram price is higher. Reason: Discarded food and luggage weight belong in the real cost.
  • Cooking is prohibited by the rental. What to do: Use approved ready-to-eat options and available local food shops. Reason: Do not improvise open flames or unsafe electrical appliances.

Use the basket across three evenings

Two-person starting plan; change the purchase quantities for appetite and pack size. Keep remaining perishables correctly refrigerated.

  • Sardine, tomato and cabbage gisa. Main ingredients: Sardines; roughly half the cabbage and tomatoes; onion. One-burner order: Cook rice, then quickly finish the canned-fish gisa and serve.
  • Tokwa adobo-style sauté. Main ingredients: Firm tofu, garlic, vinegar and suitable soy sauce; vegetable side. One-burner order: Cook rice, brown tofu, then simmer briefly with the seasoning.
  • Egg-and-vegetable torta. Main ingredients: Four eggs and the remaining suitable vegetables. One-burner order: Cook rice, sauté/drain vegetables, then cook thin tortas to 71°C.
